This famous cut comes from the front of the beef loin. Its name derives from its shape: the pulp is in fact attached to a large bone reminiscent of the famous throwing weapon of the same name. The bone also gives an unmistakable aroma to the extremely juicy and intense flavor.

Its size and the uniform distribution of fat make the meat very tender and with a simply exceptional taste.
